A food employee was observed touching dirty dishes in employee hand-wash sink then move to bay sink while I was waiting for a manager/owner and noticed two employees apply gloves in my presence. Food in the cooler area stored open with no covering nor labeled or dated when last used. food ingredient storage containers, in the cooler area, are not labeled with the common name of the food or date. Two employees observed putting gloves on 1 employee had not washed hands prior to putting new gloves on. two coolers has no temperature gauges. Informed manager and employee to address immediately. two coolers needed thermometers for ensuring proper temperatures are kept.

Violations: The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Three food employees drinking from open container in food prep and ware-washing areas. Beef, chicken and egg rolls in the freezer and walk-in cooler stored open with no covering. Food ingredient storage containers, in the prep area, are not labeled with the common name of the food. Observed bags of sugar, flour stored directly on the floor in dry storage area, rather than 6 inches off of the floor as required. Hood filters and frame have an accumulation of static dust and grease. Can opener encrusted with old food debris. Observed cooking equipment and pans, with excessive filth and old food residue. Customer self-service single-use tableware is not displayed in a manner so that only the handles are touched by customers. The hand-wash sink is soiled to sight and touch. The hand-wash sink in the prep area does not have single use towels, continuous towels, or air drying device. Old unused equipment stored in food prep area, should be removed from food facility. Soil accumulation observed building up at floor wall junctures, under storage pallets and in need of cleaning.
